Weydeland Cheese soup

kaassoep weydeland kaas

A starter for 4 persons.


  • 2 tablespoons butter
  • 3 tablespoons flour
  • 8 dl bouillon
  • 1 small onion
  • 1 dl coffee cream
  • 100 gr old Weydeland
  • 1 tablespoon parsley


Melt the butter in a skillet and add the flour. Mix well and let it fry for a minute. Add the bouillon and bring it to a boil while stirring. Add the grated onion and the coffee cream and let it simmer for 5 minutes. Meanwhile grate the old Weydeland cheese and then take the skillet off the stove. Add the cheese to the soup and stir well until the cheese is melted (do not put back on stove). Sprinkle some parsley on top and serve with a baguette.

Variation tip:

When you add the onions, you could also add some finely cut bell pepper.
